My daughter and I love shrimp and shrimp scampi is one of our favorites. My husband, on the other hand, does not like shrimp. So now you see my dilemma. I decided to try a new recipe that mixes on of my favorite flavors with another protein. I found a great recipe for shrimp scampi and just modified it to fit my needs.
Ingredients:
1/3 cup olive oil
4 cloves garlic,minced
1 pound cooked chicken, cut into bite sized chunks
1 1/2 teaspoons OLD BAY® Seasoning
1 tablespoon lemon juice
1 teaspoon parsley flakes
Directions:
1. Heat oil in large skillet on medium heat. Add garlic ;cook and stir 30 seconds or until fragrant. (Do not brown.)
2. Add chicken and Old Bay; cook and stir 3 to 4 minutes. Stir in lemon juice and parsley.
3. Serve over cooked pasta or rice, if desired.
I used lime juice instead of lemon and just regular vegetable oil, because that’s what I had on hand. It turned out delicious and even my husband enjoyed it! Just put a vegetable with it and you have a complete meal. Hopefully this will turn into one of your family favorites, too.
